For a distillery that only opened in 2021, Shindo has already made quite an impression, and this debut bottling shows exactly why. Guided by Kenji Hosoi, a legend of Japanese whisky, the distillery uses a clever dual-yeast fermentation to lactone-rich notes which has become their signature style. Bottled at 50% abv.
