The second release from Chichibu's newer Distillery II, Hint of Sherry offers an intriguing glimpse into the evolving character of one of Japan's most exciting whisky producers. Opened in 2019, Chichibu II builds on the meticulous, small-scale approach of the original distillery while developing its own distinctive spirit character.

Matured for five to six years in a combination of sherry casks and ex-bourbon barrels, with a touch of peated malt in the recipe, this release brings together rich dried fruit, chocolate and gentle smoke. The sherry influence adds depth and sweetness, while the lightly peated spirit provides an extra layer of complexity.

The nose opens with resinous peat smoke and dark chocolate, followed by raisins, sultanas and candied citrus. The palate develops into a warming combination of vanilla, honey and baking spices, before the finish delivers lingering sweet smoke and distinctive lapsang souchong tea notes.

A fascinating release for Japanese whisky enthusiasts, combining Chichibu's youthful intensity with the richness of sherry maturation.
