This Winter release of Daftmill was drawn from 27 fresh ex-bourbon barrels. Each was filled in the dark and cold December of 2011, when the weather in Fife hovered around freezing. 7,500 bottles were made, all bottled at 12 years old, albeit just a few weeks shy of their next birthday. There’s quintessential Lowland styling here: superbly honied barley, marzipan, vanilla and sweet grassy notes. Moreish and immaculate, this is another winner from this finest of farm distilleries.
This release captures Daftmill’s signature style, with green fruits, herbal nuances, and toasted almonds on the nose, followed by comforting notes of croissants and marzipan. Add a splash of water, and you’ll uncover fennel and butterscotch. The palate is beautifully balanced, starting with sweet fruits and Scottish tablet, then transitioning into drier, herbal tones. The finish is medium in length, with an elegant, floral touch.
